LAMB STEW YUM YUM

Went to the Logan Square Farmers Market yesterday to see what they had to offer which prompted inspiration to make some lamb stew.

Lamb stew meat
olive oil
3ish red onions
1 zucchini
1 eggplant
1 tomato
red wine
mushroom broth
salt
pepper

sautee lamb meat in olive oil in stock pot till browned, remove meat, add red wine to pot (bout 1/2 cup??) scraping the meat browns of the bottom of the pot (thats the good stuff), pour this red wine reduction over meat resting in the bowl. add more oil to pot, caramelize the onions, add zucchini, eggplant, and tomato, reincorporate the meat and wine reduction, add the mushroom broth, salt pepper, simmer for 1 hour.

Serve over whatever you like, potato, pasta, brown rice, cous cous, baguette, or just plain!
